Pork with BBQ sauce

Description

You can serve leftover roast pork, pulled, just by itself in a sandwich, or you cad add something to take it to another level.This is a great recipe, not the most sophisticated, but it is filling, flavorful and the kind of food everyone loves.

Ingredients

2 clv garlic
1 1⁄2 c tomato
1⁄2 c sauce (barbecue sauce)
1⁄4 t pepper
  salt
10 oz corn
2 c pork (roasted pork meat, pulled)
4 bread (bread rolls)

Instructions

In a medium sauce pan heat oil over a medium heat for 1 minute. Add the onions and green pepper and saute for 3 minutes, stir occasionally. Add garlic and saute for an additional minute.

Mix in your tomatoes, BBQ sauce, and all the herbs and spices. Bring to just a boil. reduce heat and allow to simmer at a slight bubble for 5 minutes.

Add the pork and corn, cover and cook for for 10 minutes. Toast the rolls. Ladle BBQ pork over the tops of the rolls.
